Grape varieties: Mencía, Merenzao, Godello, Mencía, Garnacha, Sousón.
Vinification: Traditional fermentation in small wooden vats and stainless steel tanks.
Aging: A few months in foudres.
Colour: Bright cherry.
Aroma: Very elegant, with fresh wild berries, subtle white pepper and violets. Extremely aromatic.
Flavour: Medium-bodied with very fine tannins that lend refinement and persistence. The freshness contributes to the presence of this wine. A slight austerity lends tension to the finish.
Serve: 16 to 18⁰
Consumption: Immediate or storage.
Harmonisation: Game stews and roasts.
