Grape varieties: Sangiovese.
Vinification: Late harvested grapes. Spontaneous fermentation in cement tanks with 30% whole bunches. Maceration for 4 to 5 months.
Aging: 12 months in cement.
Colour: Ruby.
Aroma: Dried cherries, plum skins, dried orange peel, as well as ground cloves and liquorice.
Flavour: Juicy, dried herbs, white pepper and crushed stones. Firm, chalky tannins, fresh and complex.
Serve: 16 to 18⁰
Consumption: Immediate or storage.
Harmonisation: Red meat, roast meat, pasta and cheese.
