Vinification: Hand-picked, traditional fermentation with indigenous yeasts in small wooden vats.
Aging: A few months in foudres.
Colour: Bright cherry.
Aroma: Fruity notes of ripe cherries, plums and a hint of fig, as well as a vegetal touch.
Flavour: Full-bodied, with balanced acidity and velvety tannins, as well as long and deep.
Serve: 16 to 18⁰
Consumption: Immediate or storage.
Harmonisation: Red meat, game stews and roasts, mushroom risotto and hard cheeses.
