Principal Grande Reserva Red 2011
Grape varieties: 50% Cabernet Sauvignon, 40% Touriga Nacional, 10% Merlot.
Vinification: Manual harvest, destemming and crushing, transfer to temperature-controlled stainless steel vats where alcoholic and malolactic fermentation takes place. Maceration for about 20 days.
Aging: 24 to 30 months in 225 litre French oak barrels (new and used), followed by 8 years in bottle.
Colour: Ruby.
Aroma: Intense aromas of black fruit, cedar, leather, smoke, chocolate and a hint of toasty oak.
Flavour: Full-bodied, with textured tannins, almost powdery in character. Vibrant acidity that persists throughout the tasting. A very long, mineral finish.
Serve: 16 to 18⁰
Consumption: Immediate or guardianship (up to 20 years).
Harmonisation: Red meat and grilled meat.
