Guímaro Finca Pombeiras
Grape varieties: Mencía, Caíño, Garnacha, Sousón.
Vinification: The grapes are harvested by hand and trodden in the traditional manner. Fermentation takes place with indigenous yeasts for 50 days in wooden vats, followed by light manual pressing before ageing.
Aging: 12-14 months in 225-litre French oak barrels.
Colour: Bright cherry.
Aroma: Blackberries and black cherries, accompanied by a delicate touch of spices such as pepper and a subtle hint of fresh herbs.
Flavour: Juicy, medium-bodied, with polished tannins and refreshing acidity that enhances its balance.
Serve: 15 a 17⁰
Consumption: Immediate or storage.
Harmonisation: Red meat, roasted in the oven.
