Filipa Pato Nossa Calcário Red
Grape varieties: Grapes (Vines over 100 years old).
Vinification: Hand-harvested. Partially destemmed, fermented with indigenous yeasts in open oak “lagares,” with some extraction.
Aging: 12–18 months in used oak “pipas” (500–600 l) and in 1,500-liter barrels.
Colour: Dark cherry red with a ruby rim.
Aroma: Very pure, with notes of violets, strawberries, and a subtle hint of smoke, as well as spices. After 5 to 7 years, the aromas become more complex.
Flavour: An intense structure and rich flavor in harmony with fine, elegant tannins; an extremely silky texture; and acidity that lends it energy and liveliness.
Serve: 16-18⁰
Consumption: Immediate or storage (30 to 60 years).
Harmonisation: Fine game, duck, filet mignon, or veal; braised offal. Creamy cheeses with an intense flavor.
