Filipa Pato Nossa Calcário White
Grape varieties: Bical.
Vinification: Hand-harvested and hand-sorted, pressed using slow extraction. Alcoholic and malolactic fermentations with indigenous yeasts and bacteria in 500–600-liter oak barrels and a 2,000-liter tank.
Aging: 10 months on fine lees.
Colour: Bright straw yellow with a greenish rim.
Aroma: Very mineral, with a hint of smokiness from the limestone soil, and notes of pears and dried fruits. Once opened, it reveals notes of thyme and honey.
Flavour: Refined, creamy, and with a distinct minerality. Full-bodied, with an almost crisp, nutty texture, and a voluptuous finish featuring ripe and preserved fruit.
Serve: 8-10⁰
Consumption: Immediate or storage.
Harmonisation: Elegant meals, fish, braised veal, free-range chicken, and firm, aged cheeses.
