Defio & Carlos Raposo Vinhas Velhas White
Grape varieties: Old Vines from Dão.
Vinification: The blend of more than 15 white grape varieties is vinified together, without destemming. Fermentation and ageing took place in a 1000 litre Wiseshape concrete vat for 8 and 4 months respectively, without stirring the lees.
Aging: 4 months in a concrete vat.
Colour: Bright.
Aroma: It's delicate, floral and saline.
Flavour: Vibrant acidity and concentrated fruit.
Serve: 10 to 12⁰
Consumption: Immediate or ageing (great potential for evolution in the bottle).
Harmonisation: Grilled fish, shellfish, seafood rice, white meats, sushi and vegetarian dishes.
