Chão dos Eremitas Os Paulistas 2021
Grape varieties: Old vines of Moreto, Alfrocheiro, Castelão, Tinta Carvalha, Trincadeira.
Vinification: 30% whole bunch and 70% destemmed, spontaneous fermentation in vats, followed by maceration for 25 to 40 days.
Aging: 18 months in barrels with more than three years of French oak.
Colour: Ruby with some violet hints.
Aroma: On the nose, lots of red forest fruit, as well as some undergrowth.
Flavour: Fresh attack, good fruit with hints of pomegranate. Very fine and long, with structure.
Serve: 16 to 18⁰
Consumption: Storage.
Harmonisation: A red wine with good acidity, good for meat with some fat, casserole dishes.
