Arvad Negra Mole White
Grape varieties: Negra Mole.
Vinification: Hand-picked into 15 kg boxes and whole bunch pressed. Fermented for 27 days at 16ºC in terracotta amphorae.
Aging: Aged on fine lees in the same 750-litre amphora for 9 months. It has not been filtered or stabilised.
Colour: Greenish yellow, slightly cloudy.
Aroma: Aromas of white stone fruit, gunpowder and some pastry.
Flavour: On the palate, it is deep and salty, with volume and texture reminiscent of the amphora where it was aged.
Serve: 10 to 12⁰
Consumption: Immediate.
Harmonisation: Mussels and limpets, fish dishes, Italian pasta and mature cheeses.
