Vinho da Corda dos Profetas White
Grape varieties: Listrão and Caracol.
Vinification: Selective manual harvesting, followed by direct pressing of the whole bunch into decanting tanks, without any use of SO2 until the end of fermentation, in order to allow pre-oxidation of the must and fuller spontaneous fermentation.
Aging: 12 months in an old Pipo cask from Porto Santo.
Colour: Golden yellow.
Aroma: A very intense nose, with caramelised salt somewhere between a Madeira and a sherry, as well as being unique and distinctive, with intense iron and iodine notes.
Flavour: On the palate, it is very full-bodied, rich, intensely concentrated and very long-lasting.
Serve: 10⁰
Consumption: Immediate or storage.
Harmonisation: Rich, spicy and flavourful dishes, such as octopus stew and fish stew.
