Vajra Barolo DOCG Albe
Grape varieties: Nebbiolo.
Vinification: Hand-harvested, vinified in bespoke vertical vats, fermented with indigenous yeasts, macerated for between 30 and 61 days with the cap partially submerged, followed by spontaneous malolactic fermentation.
Aging: 24 months in 40, 50 and 75-hectolitre Slavonian oak barrels.
Colour: Bright garnet red.
Aroma: On the nose, it opens with aromas of fresh, crushed flowers, lively aromatic notes of Nebbiolo and subtle balsamic hints.
Flavour: On the palate, it is vibrant and lively, enriched by notes of rose petals, fresh red berries, spices, tobacco and orange peel. The finish is long, with fine, velvety tannins.
Serve: 16 to 18⁰
Consumption: Immediate or storage.
Harmonisation: Capriolo ai mirtilli con alloro e rosmarino arrosto, beef Bourgignon, slow cooked shredded pork, rib roast.
