SOU White Alvarinho
Grape varieties: Alvarinho.
Vinification: Hand-harvested, gently pressed and decanted. Fermented with indigenous yeasts. 40% aged in foudres and used 400-litre barrels, with spontaneous malolactic fermentation; 60% aged in vats.
Aging: 9 months on fine lees.
Colour: Citrus yellow.
Aroma: A complex wine that develops with aeration, revealing notes of apricot, lemon leaf, spices, wild flowers and plenty of flint and wet stone.
Flavour: Great texture, freshness and length. The acidity is perfectly balanced with the body, leading to a long, taut and clean finish.
Serve: 10 to 12⁰
Consumption: Immediate or storage.
Harmonisation: Fish, seafood and white meat dishes.
