Sottimano Barbaresco Pajorè DOCG
Grape varieties: Nebbiolo.
Vinification: Selection, followed by spontaneous fermentation. After maceration, it is transferred to wooden barrels, where malolactic fermentation is completed.
Aging: Oak barrels.
Colour: Ruby open.
Aroma: Red fruit, spices and tobacco notes.
Flavour: Persistent fruity notes of cherry, together with salty and minty notes. Generous structure and well-defined tannins, with balsamic fragrances on the finish.
Serve: 16 to 18⁰
Consumption: First mate or guard (2035).
Harmonisation: Red meat, ossobuco, pasta and cheese.
