Grape varieties: 80% Grüner Veltliner, 20% Riesling
Vinification: The winemaking process is typical of the early 19th century. After harvesting, the grapes are crushed, macerated for 10 to 18 hours, pressed with a basket press and fermented in wooden barrels without sedimentation. After fermentation, the wines are regularly removed and aerated, thus separating them from the yeasts.
Aging: 2018 (85%), 2017 (10%) and 2016 (5%).
Colour: Greenish-yellow.
Aroma: A complex, layered nose, blending notes of fresh butter, crushed nuts, ripe stone fruit and a hint of peppery spice, with hints of mango, pear and orange peel.
Flavour: Full-bodied and voluminous, with a texture reminiscent of a white wine from Burgundy or Alsace. It has a lively and bright acidity that balances the richness of ripe fruit, leading to a long, salty-mineral finish with fine tannins.
Serve: 10 to 12⁰
Consumption: Immediate or storage.
Harmonisation: Ideal with fish, white meat, cheese, scallops and lobster.
