Quinta de San Michel Sparkling Brut
Grape varieties: Malvasia de Colares.
Vinification: Without destemming, the whole bunches were gently pressed for 4 hours. Decantation for 36 hours and fermentation in stainless steel for 20 days.
Aging: 4 months in used French oak barrels and 20 months on lees.
Colour: Lemon yellow.
Aroma: A delicate nose with aromas of citrus fruits, mint and spearmint, and a light autolytic character with notes of toast and brioche.
Flavour: Elegant, with very fine bubbles, with flavors of lemon, green apple and apricot, hints of lees aging, with smokiness and brioche notes, finishing with a pronounced acidity.
Serve: 10 to 12⁰
Consumption: Immediate or storage.
Harmonisation: Seafood and shellfish, such as limpets and oysters, as well as fresh Asian dishes.
