Guímaro Finca Meixemen
Grape varieties: Mencía, Brancellao, Merenzao, Sousón.
Vinification: Fermentation in closed truncated cone-shaped vats, partially with stems, for around 50 days. Subsequently, the wine is bled and the pulp is gently pressed. Malolactic fermentation in barrels.
Aging: 6 months in wooden cones and 12 months in 225- and 500-litre French oak barrels.
Colour: Bright cherry.
Aroma: Fresh, fine and delicate, initially austere but quickly developing aromas of red fruits, violets and wild herbs that form a seductive harmony.
Flavour: Expressive and balanced, as well as subtly balsamic and flavourful.
Serve: 10 to 12⁰
Consumption: Immediate or storage.
Harmonisation: Game stews and roasts.
