Guímaro Finca Capeliños
Grape varieties: 85% Mencía, Brancellao, Caíño, Garnacha, Sousón.
Vinification: The grapes are harvested by hand and trodden in the traditional manner. Fermentation takes place with indigenous yeasts for 50 days in wooden vats, followed by light manual pressing before ageing.
Aging: 12-14 months in 225-litre French oak barrels.
Colour: Bright cherry.
Aroma: Red fruits such as cherries and raspberries, complemented by delicate floral notes and subtle hints of aromatic herbs.
Flavour: Juicy and flavourful, medium-bodied with an exceptional balance between maturity and freshness, as well as polished tannins.
Serve: 15 a 17⁰
Consumption: Immediate or storage.
Harmonisation: Game stews and roasts, red and white meats, oily fish.
