Vinification: Meticulous manual selection, partial destemming, with the use of whole bunches depending on the vintage. Fermentation with indigenous yeasts, daily pigeage for 3 weeks and first pressing by gravity, followed by slow and gentle pressing to obtain an exceptionally pure wine.

Harmonisation: Refined game meats, pigeon, duck, filet mignon or veal, cooked offal, never too spicy. Creamy cheeses with an intense flavor.
