Famille Grossot Chablis Cuvee La Part des Anges
Grape varieties: Chardonnay.
Vinification: Natural fermentation with native yeasts, followed by malolactic fermentation and a long maturation period to integrate the aromas. If necessary, refinement with bentonite, followed by cold stabilisation and cross-flow filtration.
Aging: 18 months.
Colour: Lemon yellow.
Aroma: Aromas of apple, pear, lemon, fresh herbs and chamomile, with a hint of vanilla.
Flavour: Confirms the aromas, with good acidity, salinity and minerality.
Serve: 10⁰ a 11⁰
Consumption: Immediate or storage.
Harmonisation: Fish dishes, salads, seafood and white meats.
