Infinitude Malvasia de Colares 2021

Infinitude Malvasia de Colares 2021 is a white wine with citrus and baked apple notes, as well as a herbal sensation (aniseed and honey). Medium-bodied, bittersweet, as well as very fresh and pleasant, the great ageing potential will bring out more distinct aromas, with the appearance of toasted notes of dried fruit and iodine, as well as wax and hay.

    Infinitude Malvasia de Colares 2021

    Grape varieties: Malvasia de Colares.
Vinification: Vinification using the classic "open spout" process, with total destemming, decanting for 18 hours and fermentation in stainless steel tanks with temperature control (16-18ºC) for 14 days.
Aging: 5 months in 500-litre reconditioned French oak barrels of Burgundy Chardonnay.
    Colour: Very crystalline greenish yellow.
Aroma: Notes of citrus and cooked apple, as well as a herbal sensation (aniseed and honey).
Flavour: Medium-bodied, bittersweet, very fresh and pleasant. With ageing, the aromas become more distinct, with toasted notes of dried fruit and iodine appearing, as well as wax and hay.

    Serve: 10 to 12⁰
    Consumption: Immediate or storage.

Harmonisation: More elaborate and spicy fish dishes. It goes very well with white fish carpaccio with a sprinkling of mustard, cockle rice with coriander, sole á Menier or even peas in a pan with a touch of mint.
