Quinta do Sobral Santar Malvasia Fina
Grape varieties: Malvasia Fina.
Vinification: Total destemming and immediate pressing. Half of the must was transferred to used 250-litre French oak barrels, where it fermented with indigenous yeasts and aged for 6 months, while the rest fermented in stainless steel tanks.
Aging: Stainless steel.
Colour: Citrus yellow.
Aroma: Spices, nutmeg, floral, very complex and delicate.
Flavour: Complexity and some robustness are associated with the fine lees. A timid start, but one that evolves, gaining volume and aromatic complexity.
Serve: 10 to 12⁰
Consumption: Immediate or storage.
Harmonisation: Grilled fish, white meats, cod dishes.
