Quinta do Sobral Santar Encruzado is a minimally interventionist wine that reflects the terroir of the Dão region. It has notes of lemon, resin and flowers, as well as a very complex, light oak sensation with soft vanilla. Good structure, unctuous, with acidity and a spicy finish.

    Quinta do Sobral Santar Encruzado

    Grape varieties: Encruzado.
    Vinification: Total destemming and immediate pressing. The resulting must was transferred to new 250-litre French oak barrels, where it fermented with indigenous yeasts, with slight punching down.
    Aging: 6 months in French oak barrels.
    Colour: Citrine yellow.
    Aroma: Lemon, resin and floral notes, as well as a very complex, light oak sensation with a hint of vanilla.
    Flavour: Good structure, unctuous and full of character, with notable acidity and a spicy finish (ginger).


    Serve: 10 to 12⁰
    Consumption: Immediate or storage.


    Harmonisation: White meat, cod dishes, baked fish.
