Filipa Pato Nossa Solera Sparkling Wine

Grape varieties: Baga, Bical and a small percentage of other indigenous grape varieties.
Vinification: Hand-harvested, carefully pressed, fermented in 500–600-litre casks with wild yeasts. To create the base for the ‘Solera’, we blend a base cuvée from the 2001 vintage and add wines selected from our finest vintages to a large cask, where they are left for three years. Secondary fermentation (classic method) in the bottle, followed by disgorging after 18 months.
Aging: Ageing in used barrels for an unspecified period.
    Colour: Light golden.
Aroma: A hint of white flowers, ripe and dried citrus fruits, forest fruits, liquorice, as well as marzipan and gingerbread.
Flavour: The flavour is very complex: notes of hazelnut, nougat, almonds, brioche, candied orange peel, cocoa beans and honey, with a lingering minerality and refreshing acidity, and a long, persistent finish.

    Serve: 8-10⁰
    Consumption: Immediate or storage.

Harmonisation: Fish, seafood, white meat and as an appetiser.
