Filipa Pato Dinâmica White

Filipa Pato Dinâmica Branco is a wine made from the Arinto and Bical grape varieties, in which the minerality of the clay-limestone soils is pronounced, combined with an Atlantic salinity, complemented by notes of pear, iodine, thyme, and rosemary, as well as a persistent acidity.

    Filipa Pato Dinâmica White

    Grape varieties: Bical and Arinto.
Vinification: Hand-harvested. The whole clusters were pressed and fermented with indigenous yeasts in a temperature-controlled tank. 10% is fermented in French oak barrels (500–600-liter barrels).
    Aging:
Colour: Bright straw yellow with a greenish rim.
Aroma: Notes of pear (typical of the Bical grape variety), with hints of iodine and a slight spicy note (thyme and rosemary).
Flavour: Refined, creamy, with distinct minerality and salinity. The mid-palate is dominated by fruit, and the finish is dry and refreshing, with lingering acidity.

    Serve: 10-12⁰
    Consumption: Immediate or storage.

Harmonisation: Fresh goat and sheep cheeses, raw and marinated fish and seafood, grilled poultry, smoked quail, Mediterranean cuisine, and salads with fresh vinaigrettes made with yuzu or lemons from the garden.
