Famille Grossot Chablis Premier Cru Les Fourneaux
Grape varieties: Chardonnay.
Vinification: After allowing the juice to settle, we transfer one third to barrels and two thirds to tanks. Natural fermentation with native yeasts, followed by malolactic fermentation. After 8 months, the wines fermented in wood are racked and blended with the others. If necessary, refinement with bentonite, followed by cold stabilisation and cross-flow filtration.
Aging: 8 months in wood and 18 months in stainless steel.
Colour: Lemon yellow.
Aroma: Complex nose with mineral and stony notes.
Flavour: Mineral, dry, medium-bodied, with structure for ageing, still somewhat austere in its youth.
Serve: 10 to 12⁰
Consumption: Immediate or storage (2025-2039).
Harmonisation: Fish and white meat dishes.
