Bimbache La Raya
Grape varieties: Verijadiego Blanco and Listán Blanco.
Vinification: The wine ferments spontaneously with indigenous yeasts in stainless steel vats.
Aging: Maturation takes place in a very old Manzanilla Sherry barrel for one year, under a thin layer of flor yeast, which gives it a hint of walnut, spices and yeast.
Colour: Lemon Green.
Aroma: The nose is reminiscent of a fine, unfortified wine, with notes of raw almonds, yeast, citrus peel and sea salt.
Flavour: The acidity is electric and sharp, and the texture is enveloping, almost oily. The profile is dry, with notes of walnut, candied apple and subtle spices, all against a mineral and saline background that prolongs the finish.
Serve: 10 to 12⁰
Consumption: Immediate.
Harmonisation: Seafood, grilled fish and Asian food.
