Bimbache explores the wild terroir of El Hierro, in the Canary Islands. Rayco Fernández and Pablo Matallana are reviving heroic vineyards on volcanic soils, preserving the island's ancestral identity.
They practise sustainable, artisanal viticulture, focusing on local grape varieties such as Listán Blanco and Verijadiego. Minimal intervention in the winery ensures pure, vertical and deeply mineral wines.
The limited production reflects the harsh Atlantic climate and altitude, and each bottle is a tribute to the culture of El Hierro.
