Sercial dos Villões
Grape varieties: Sercial (aka Esgana-Cão).
Vinification: Hand-picked and selected, whole bunches are pressed directly into SO2-free decanting tanks until fermentation is complete, allowing the must to pre-oxidise and ferment spontaneously in 500-litre stainless steel vats and a 228-litre barrel.
Aging: Total lees ageing for 9 months.
Colour: Clean citrine yellow.
Aroma: Pure mineral aroma, citrus with hints of pitanga.
Flavour: Tense, acidic attack, very mineral and saline, as well as fresh and very present. Good persistence.
Serve: 14⁰
Consumption: Immediate or storage.
Harmonisation: Seafood and oily fish.
