Vinha das Penicas White "The old-fashioned way"
Grape varieties: Centenary and pre-centenary old vines (Fernão Pires, Bical, Dona Branca and Rabo de Ovelha, among other unidentified vines).
Vinification: Fermented for 12 days in an open press using the tanning method with indigenous yeasts.
Aging: Cement and French oak barrels for 12 months, followed by two years in the bottle.
Colour: Bright yellow.
Aroma: Orange blossom, loquat, peach and nectarine, as well as white pepper, honey, chalk and slight salinity. Hints of chipped stone and tea notes.
Flavour: Fresh and structured with a long, tense and complex finish, full of individuality and character.
Serve: 10 to 12⁰
Consumption: Immediate or storage.
Harmonisation: White meats, baked fish, game dishes and cheeses.
