Quinta de San Michel Malvasia
Grape varieties: Malvasia de Colares.
Vinification: Destemming and crushing, followed by direct pressing and decanting for 36 hours. Fermentation in barrels for 15 days.
Aging: 8 months in French oak barrels (15% new) on the lees, and 24 months in the bottle.
Colour: Greenish-yellow colour.
Aroma: Exuberant, bringing the sea into the glass. Aromas of lemon, peach, jasmine, seaweed, and wet stone, as well as smoke and butter from the barrel.
Flavour: Fine and complex, with several layers. Salinity, as well as dryness on the finish.
Serve: 10 to 12⁰
Consumption: Immediate or storage.
Harmonisation: Coastal dishes, from grilled cuttlefish to razor clam rice, and fresh salads.
